We don't use the worker module ... but still require our supervisors to access packing lists, etc, (but not have access to the financial information). Is that possible?

Only with the workers module. One of the main features of the workers module is the online schedule for your laborers; however it includes all the features related to multiple user logins (permission settings for different users).
