What is the best way to set up a fee for a day prior delivery, late night rental or next day pick up?

I would like the customer to have the option when getting a quote or checking out to select these options.
I could make this an option for the customer and you would be able to see that they picked the option and then you'd have to make the schedule for the day before the event manually. What would you like the charge to be so we can build this fee?
Would there be anything similar to this that the customer could check availability of their equipment and opt to extend their rental? This would be more or less "during" their event.. We could send them an auto email offering them an extra day or something for a "discounted" rate.
can the charge be a doll amount or a percentage?
