Can you create different receipts?

For instance, if a client is getting a refund due to a cancelled event, can I create a custom receipt around that?

There can only be one "default" receipt. Another idea may be setting up a refund receipt as an invoice email--if you think you would like that. Then you can send the email directly from the lead w/ the info. I can set it up to look like a receipt. Just let me know what other info you would want on it.
