Can auto-booking be blocked based on custom fields on quote page?

I have a custom field on my quote page for stairs/hills. Is it possible to prevent an auto booking based on the customer selecting one or more of the choices? For example, if a customer selected "5 or more stairs" the system would put in a contact request.
